Gluten Free Granola with Grain Free Option

No paragraphs with a story to tell about the recipe...JUST the recipe :)


Ingredients

  • 1/2 cup maple syrup

  • 1/2 tsp. vanilla

  • 1/8 cup coconut oil

  • 1/8 cup ghee

  • 1/4 cup almond butter (peanut or cashew works well, too!)

  • 1 T cinnamon

  • Pinch or grate of nutmeg

  • 2 1/2 cups certified GF rolled oats

  • 1/2 cup chopped nuts/seeds (pecans, walnuts, pepitas)

  • 1/2 cup dried fruit (I like golden raisins)

  • Liberal sprinkle coarse salt

Directions

  • Mix maple syrup, vanilla, coconut oil, and almond butter together. If your coconut oil is solid, melt it first.

  • Mix oats, nuts, dried fruit, salt, nutmeg, and cinnamon together, then add to wet ingredients.

  • Pour onto a parchment paper lined baking sheet in an even layer. Bake at 300 degrees for about 30-40 minutes, stirring every 10 minutes.

Makes 15 1/4-cup servings!

For Grain Free:


Substitute the GF oats with:

  • 1 cup flaked coconut

  • 1 cup slivered almonds

  • 1/2 cup roughly chopped macadamia nuts
